Making Cheese

A member family from Bajo Sus Alas church make wonderful farmer cheese, requesón (like ricotta) and natural yogurt. Relocated from the state of Vera Cruz, they set up shop at the farm until they could locate suitable space for their enterprise.
The process begins with delivery of fresh milk, transported in old-fashioned milk pails, then heated to the proper temperature and infused with curdling agent. When the curds form, they are separated from the whey, drained and pressed into molds. The leftover whey is reheated and strained to make the creamy requesón. Yum!
We would love to share this process with families who need to augment their family income. God’s word promises that He blesses the work of our hands.
